Delice & Sarrasin is pleased to be incorporating more wild food into their menu as the wild food trend continues to grow. As a recent article by the Washington Post on the rise of wild gastronomy commented, there is now a significant environmental, nutritional and moral case for eating more wild foods.

Delice & Sarrasin believes their shift to a more wild food-focused menu aligns with both their ethical and environmental ethos, as well as their intention to serve innovative, flavorful and unique plant-based dishes.

The French bistro’s new menu features a selection of cruelty-free meals that have been inspired by the rich and diverse flavors of wild food—and by the produce that grows regionally in New York and in the north-east of the United States—and that blend this with some of the classic flavors of French cooking.

New dishes that showcase both locally sourced wild food and organically farmed local farm-to-table produce include the restaurant’s Cassoulet Toulousain, a hearty white bean slow-cooked casserole with local onions, carrots and tomatoes, complemented by an in-house artisan-made plant-based ‘duck' patty and Toulouse ‘sausage’.

Also popular is their new appetizer, Escargots Beurre Maitre D’hotel, which uses wild oyster mushrooms cooked in vegan parsley garlic butter.

The bistro's head chef, Yvette Caron, carries this same environmental, nutritional and moral ethos throughout the whole menu, including its dessert and drink menus, which feature more organic, vegan and local choices.
